Production area:
very small area of approximately 5 square km including the municipality of Gabiano in particular these grapes come from Cantavenna.
Terrain:
uniquely hilly, moderately deep in nature, of calcareous origin characterised by ancient marine silty deposits.
Grape variety:
100% Rubino di Cantavenna, in particular an indigenous vine composed of 75% Barbera Doc, 15% Grignolino and the remaining Freisa and Malvasia.
Product Description:
the blend of grapes once harvested must be aged by law 24 months. Aging usually takes place in steel barrels or barriques. In particular our Rubino exists in both versions. Already the barbarian and Celtic Roman populations cultivated this blend of vines that is part of the ampelographic base. This vine, thanks to the soil rich in limestone, the low summer rainfall and the thermal gradient, is favored in the sugar accumulation of the grapes. A good and persistent structure and a high quantity of tannins guarantees the longevity of the product.
How the wine presents itself:
still, ruby red in color, from which the name derives, it has clear and garnet reflections, the aroma is very intense and recalls notes of roses, violets, blackberries and cherries. It is a perfect wine for aperitifs, first and second courses. Excellent with mushrooms, truffles and cheeses.
Alcohol content: 14 degrees
Barriqued alcoholic strength: 14.5 degrees
Total minimum acidity: 6.0 G/L
